Marshmallow Icing
A light and fluffy icing that doesn't actually use marshmallows. My mother used to frost my birthday cake with this tasty icing.
- 4 egg whites
- 1 cup granulated sugar
- 1/4 tsp cream of tartar
- 1 tsp vanilla or almond extract
- Pour room temperature egg whites into mixing bowl.
- Blend on high speed until frothy and soft peaks form.
- Add sugar gradually while the mixer is running.
- Add extract.
- Blend in ingredients (about 1 minute). Egg whites will appear glossy and will cling to beaters.
- Apply with a spatula.
